爆双脆是北方山东馆的名菜。可是此地北方馆没有会做爆双脆的。如果你不知天高地厚，进北方馆就点爆双脆，而该北方馆竟不知地后天高硬敢应这一道菜，结果一定是端上来一盘黑不溜秋的死眉瞪眼的东西，一看就不起眼，入口也嚼不烂，令人败兴。就是在北平东兴楼或致美斋，爆双脆也是称量手艺的菜，利巴头二把刀是不敢动的。所谓双脆，是鸡胗和羊肚儿，两样东西旺火爆炒，炒出来红白相间，样子漂亮，吃在嘴里韧中带脆。
